Cheap Cheese

I stopped at Costco in hopes of snagging baking supplies for my cupcake experiment but was annoyed to find they only carry ap flour (not cake flour) and didn’t have much else except white sugar and chocolate chips–not was I was looking for.

My trip, and mood, was salvaged when I spotted a round of delice d’argental cheese for less than $6.00. For dinner I enjoyed the French, triple cream goodness spread on crusty bread.

Kashi Convert

A few months ago i received a free sample of Kashi Go Lean Crunch. My first reaction was that it tasted like sugar honey smacks (I was never a fan of that frog), but quite pleased that it didn’t instantly go soggy.

The Kashi marketing efforts worked–I’ve been eating it (original flavor) with vanilla soymilk almost every morning since then. I’m quite surprised that a big bowl actually fills me up until lunch. If I eat an egg and cheese sandwich or bowl of oatmeal I’m hungry by 10:30.

cherry lime cupcake

I was trying to achieve the taste of Sonic Cherry Limeades. Pictured is lime cupcake with cherry jello. Also made cherry cupcakes with lime jello.

These were a start, but I need to refine the cake recipe. This time I used a white cake mix and added lime juice to half the batter and maraschino cherry juice to the other half. Too much sugar and too much beating made for a tough cake. I’m not sure if the acid from the lime did something funky, as the lime cake was even tougher than the cherry.

I’m researching recipes for old-skool maraschino cherry cake but need to figure out the best substitute for shortening–either all butter or part butter part oil…need to work out the percentages.
